HANDMADE DUMPLINGS 手工饺子



Dumplings, or jiǎozi, is one of the most traditional and cherished dishes in Chinese cuisine. Dumplings are traditionally prepared and enjoyed together with family and friends. They are even believed to serve a higher purpose: to provide you with great fortune and a good life.

Dumplings were originally referred to as «tender ears» because they were used to treat frostbitten ears about 1700 years ago. To help the freezing population, the Chinese doctor Zhang Zhongjing poured lamb, peppers, and some warming medicines in a pot. He chopped them and filled small dough wrappers which he boiled and served with warm broth up until the Chinese New Year. In order to celebrate the New Year, people imitated Zhang's recipe to make dumplings.

Dumplings generally consist of minced meat and finely chopped vegetables wrapped in a piece of thin dough. At Kinabolle we make our dumplings from scratch. Each dumpling is packed by hand, giving them a characteristic homemade look.

NO 1 Sweet Spicy Chicken


Our sweet spicy chicken has its roots in Korea, where it’s called dakgangjeong. The chicken is deep-fried and crispy, glazed in a sticky sweet, spicy sauce. Koreans typically eat it with pickled cabbage, which adds a fresh touch to this otherwise sweet dish. Our sweet spicy chicken goes well with beer or coke, and is the perfect party snack.

Sweet spicy chicken became popular in China via a Korean TV drama from 2013, where this dish is frequently spotted. We chose to include it in our menu not only because of its special character, but because it shows how the global popular culture impacts Chinese food.

This dish is originally from Sichuan, a Chinese region famous for its spicy food. In Chinese, this dish is called mala xiangguo. Ma, la, and xiang represent three different tastes: ma means numbing, la means spicy, and xiang means savoury. This stir-fried dish mixes a variety of raw ingredients with natural spices. It’s super healthy with a strong flavour.

All the ingredients used in the dish have their own, unique tastes. We make our own cooking oil of vegetable oil and natural spices, such as Sichuan pepper and dried chilli. For some extra savoury goodness, we base our sauce on chicken or vegan broth made from scratch.

HOMEMADE NOODLES 宽面


Noodles are one of the most important components of Chinese food culture. Our hand-pulled noodles are called biangbiang noodles in Chinese. This particular type of noodle comes from the Shaanxi province of Northwest China.

Biangbiang noodles are made from wheat flour and hand-pulled into long and thick shreds. They’re chewier and more springy than regular noodles.

The word «biang» is an onomatopoeia: it mimics the sound made when the dough is pulled and slapped against the working surface. The Chinese character for «biang» is also considered to be the most complex Chinese character.
